Need Recipe for Lasagna

hi there,
I have yet to find a great lasagna recipe. This is what I am really looking for:
alot of cheese on top, not too much tomato sauce, and perhaps plenty of vegetables..

anyone have a good recipe they would be willing to share?

Re: Need Recipe for Lasagna

i blend spinach into my ricotta mix, and use julienned zucchini and diced onions in between layers.

the recipe is basic other than that, i like to skip steps in cooking so i always use basic marinara sauce as a tomato base, mix in one can tomato paste, a spoonful or two of anchovy paste (i hate anchovies, but anchovy paste blended into tomato sauce makes it incredibly tasty- not sure why), red pepper flakes, onions (i like onions), minced garlic, and two tablespoons dark brown sugar, and italian sausage (just say no on the ground beef), and seasonings.

ricotta mix is basic too in a way- ricotta, parmesan, pepper jack(instead of mozzarella- more zing), and an egg, and of course the spinach- use fresh spinach please.

Re: Need Recipe for Lasagna

well apparently the original lasagna recipe is made with vegetables. mom does lasagna with meat though.

i know my mom either cooks herself pasta (we have a special machine that allows us to make big thin bands) or buys directly large bands.
you have to cook them before putting them in your dish. the best way to know fresh pasta are cooked is when they go back to the surface of the salted boiling water. it doesn't take more than a few minutes.

what you could try is start by putting one band in your dish (it has to be big), then add vegetables(i'd use zucchinis and tomatoes mixed together and precooked in a frying pan with a bit of olive oil and herbs), then add cheese (i'd choose emmental or mozzarella), add another band, add vegetables and cheese etc. i'd finish with a good coat of cheese, and put the dish in the preheated oven (i think 200°C) until it has melted.

a bit OT but considering lasagna can really fill a stomach, make sure you only serve a salad or soup before, and prefer a very light and refreshing dessert. then go walking to help your stomach digest it lol.

Re: Need Recipe for Lasagna

we have ground/minced beef and bacon in ours. My mum makes the MOST AWESOME lasagne. It doesn't have vegies in though the recipe has only carrot and celery and I think she leaves it out anyway
