I'm honestly taking it easy tonight and making Beef Smoked Sausage w/ Green Beans and Shells & Cheese... I made Chicken Kiev w/ Crabcakes, Rice Pilaf and salad the other night... And tomorrow will probably be Blackened Chicken Fettuccine

Oooo, that sounds really yummy! Please post the recipe?!!
I'm thinking of making shrimp scampi over pasta. I might also make a few stuffed mushrooms on the side.  (The mushrooms have been in the fridge for a little while so I need to use them up.)

I have been working long hours lately and I don't want to spend all evening cooking dinner! Plus I am rarely motivated to cook nice dinners when it's just the two of us...

hmm tonight i was really super simple and just made beef stew over elbow noodles and brownies for dessert because its cold and rainy and a comfort food night was in order lol
