From the 04.01.05 issue of Family Circle, pg 130

2 tablespoons unsalted butter

1/2 medium onion, halved, sliced thin

8 large eggs

1 piece smoked turkey, about 6 oz, cut into 1/4 inch dice

1/4 cup half-and-half

6 oz smoked Gouda cheese, cut into 1/4-inch dice

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon ground nutmeg

1/2 cup fresh parsley, chopped

[*]Heat oven to 325 degrees.

[*]Melt butter in 8-inch ovenproof nonstick skillet. Add onion & cook over medium-high heat until onions start to brown, about 7-8 minutes, stirring to prevent burning.

[*]In a large bowl, or measuring cup, whisk together eggs, smoked turkey, half-and-half, 1/2 of the smoked gouda, salt, black pepper, nutmeg & parsley.

[*]Add egg mixture to skillet & cook 7-8 minutes until edges are just set. Gently stir the middle halfway through cooking.

[*]Sprinkle remaining cheese over the top of the frittata. Place skillet in oven & bake 325 degrees for about 30 minutes or until completely set.

[*]To serve, gently slide the frittata onto a serving plate & slice into 4 wedges. Serve with a green salad & low-carb or carb-free dressing, if desired.

Makes: 4 servings. Prep: 10 minutes. Cook: 15 minutes. Bake: at 325 degrees for 30 minutes.

Per serving: 393 calories; 28 g fat (14g sat.); 29 g protein; 6 g carbohydrate; 0 g fiber; 837 mg sodium; 498 mg cholesterol.
