Another of my mom's recipes.

This works well as either a side dish or a main course!

Spinach Casserole

Ingredients

  • 1 10-oz package frozen spinach
  • 1-1/2 cup cottage cheese
  • 1-1/2 cup grated cheddar cheese
  • 2 eggs, slightly beaten
  • 3 tbs flour
  • 1 tbs chopped dried onion (optional)
  • 1/2 tsp salt
  • 1/2 cup bread crumbs
  • 2 tbs melted butter
Directions[*]Cook and drain spinach. (I usually microwave it for 5 minutes in the package.)

[*]Combine spinach with next 6 ingredients in a small casserole dish.

[*]Combine bread crumbs and butter in a separate bowl to form a crumb topping; spread evenly over top of spinach mixture.

[*]Bake at 350 degrees until golden brown and heated through (approximately 25 minutes).

I wish I could bring myself to eat spinach... Doesn't help Cyera's allergic... I do know some people that will love this though. Thanks!
