Just curious! I am going into my 6th year as a veg. I don't miss meat but I have put on weight!

I am on a budget so that means too many carbs....ugh! Anyway, I always like to hear of new recipes or stories from people who live a veg life!

 
i am trying to go veg..wanted to do vegan but its SO hard

i would just suggest pastas but then again, carbs!

Unfortunately really healthy stuff takes alot of time to prepare. Good luck going veg! Morningstar and Boca make some really tasty meat substitutes.

 
Veg here too! I've been vegetarian for 9 years and vegan since I became lactose intolerant 4 years ago. I'm also allergic to wheat so I don't get too many carbs. I would recommend learning to cook "ethnic" foods from places like India, most of the rest of Asia, Africa, Middle East (yum! hummus and falafel!), Mexico and Latin America. It seems like most European and Western foods have a lot of meat, cheese (and wheat which is bad for me), so I eat a lot of "ethnic" foods.

Thanks for the links! Cool that you are vegan. Like I said I have tried but it is really difficult, especially in my town which is VERY carnivorous. One day I still would like to.

One day I still would like to. You know, I don't miss cheese at all. All the commercially made cheeses are so nasty. If I'm feeling particularly domestic I'll make some cheeses using a book called The Uncheese Cookbook. Normally I just do without and I'm totally satisfied!

 
I am not a vegetarian nor a vegan but I love some of the foods, I attend vegan, heart healthy (vegetarian based on Dean Ornish and Joel Furman) and raw food classes at my local health food store every Sat. The raw foods are so different and the flavors so intense compared to cooked foods. Here are some sites to check into

I love raw foods too, but sometimes my digestive system just doesn't agree. Thanks for all those links!!

 
Here is a recipe you might want to try since you are vegetarian.

Roasted Mediterranean Vegetables

Ingredients

1 each yellow and red bell pepper

2 Spanish onions

2 large zucchini

1 large eggplant or 2 small eggplants

1 fennel bulb, thickly sliced

2 beefsteak tomatoes

8 fat garlic cloves

2 tbsp olive oil

fresh rosemary sprigs

black pepper

lemon wedges and black olives (optional), to garnish

Directions

1 Halve and seed the peppers, then cut them into large chunks. Peel the onions and cut them into wedges.

2 Cut the zucchini and eggplant into large chunks.

3 Preheat the oven to 425 degrees. Spread the peppers, onions, zucchini, eggplant, and fennel in a lightly oiled shallow ovenproof dish or roasting pan.

4 Cut each tomato in half and place cut side up, with the vegetables.

5 Tuck the garlic among the vegetables, then brush them with the olive oil. Place some sprigs of rosemary among the vegetables and grind some black over the top, especially the tomatoes.

6 Roast for 20 - 25 minutes, turning the vegetables halfway through the cooking time. Serve from the dish or on a platter, garnished with lemon wedges. Scatter with some olives over the top, if desired.
