Page5's egg recipe reminded me of my own so I thought I might post ours. This is a great recipe for kids, plus you can sneak veggies in. This is a really versatile recipe and you can sort of go crazy by changing up the fillings.

Ingredients:

  • Refrigerator biscuits
  • Pizza Sauce
  • Shredded mozzarella and cheddar cheese
  • Pizza fillings (toppings) of your choice like: Pepperoni, mushrooms, bell peppers, ham, olives, pineapple, onions, bacon, tomatoes, spinach, etc.

Tools:

  • Muffin tin(s)
  • Non-stick baking spray or oil

Directions:

  • Preheat oven to 400 degress
  • Dice and prepare your fillings
  • Spray your muffin tin with non stick baking spray or oil
  • Open your biscuits, roll them out to about half inch height circle
  • Press the biscuit dough into each tin
  • Sprinkle a little cheese in the bottom
  • Put a spoonful or so of pizza sauce in
  • Add fillings of choice
  • Sprinkle a little more cheese on the top

Bake 15-20 minutes. Cool quite a bit before eating since the fillings can get very hot. Serve with extra pizza sauce for dipping.

These also can be frozen and reheated quite easily.

Substitutions: You can also make Hot Dog Uglies by putting sliced hot dogs, chili with no beans and cheese inside.
