If you're anything like us, you probably find yourself reaching for the economy-sized bag of frozen chicken breasts when you need a quick and easy dinner! So here are some fun, easy pork recipes that we like if you're looking for a change!
Apricot Pork Chops
Ingredients
1 can (15 oz) apricot halves, undrained
4 bone-in pork loin chops (3/4 inch thick)
1 tbs butter
1 tbs corn starch
2 tbs cold water
DirectionsPlace apricots in food processor or blender and process until coarsely chopped.
[*]In a large skillet, brown pork chops over medium-high heat. Add apricots and bring to a boil. Reduce heat; cover and simmer 7-10 minutes or until meat juices run clear.
[*]Remove pork chops and keep warm. Combine cornstarch and cold water until smooth; stir into apricot mixture. Bring to a boil; cook and stir 1 minute or until thickened. Season with salt and pepper. Serve over pork chops.
Greek Pork Tenderloin Medallions
Ingredients
1 cup chicken broth
1 tsp grated lemon peel
1 tbs fresh lemon juice
1/2 tsp dried oregano
2 tsp cornstarch
1 clove garlic, chopped
1 lb pork tenderloin, sliced, or pork chops
2 tsp olive oil
DirectionsIn a small bowl, combine chicken broth, lemon peel, lemon juice, oregano, cornstarch, and garlic. Set aside.
[*]Season pork with salt and pepper. Cook in a large skillet over medium-high heat until meat juices run clear. Set pork aside.
[*]Reduce heat to medium. Stir broth mixture and add to skillet. Cook and stir for one minute or until bubbly.
[*]Return pork and accumulated juices to skillet. Cook for 2-3 minutes, turning once. Spoon sauce over pork and serve.
Serves 4. 171 calories, 7 g fat, 307 mg sodium
Sweet and Sour Pork Chops
Ingredients
8 boneless pork loin chops, 1/4 inch thick
3 tbs chili sauce
3 tbs honey
2 tbs soy sauce
DirectionsPlace pork chops in a foil-lined baking pan.
[*]In a small bowl, combine chili sauce, honey, and soy sauce. Pour over pork.
[*]Bake at 450 degrees until meat juices run clear, about 10-15 minutes.
