It's been a while since anyone's posted any recipes so I thought I'd dig out a few from my recipe box ...
This is a recipe my mother-in-law gave me!
Ultra-Easy Chicken Quesadillas
Ingredients
[*]Preheat oven to 450 degrees.
[*]Pour beans and corn into a collander or strainer and rinse with cold water.
[*]Heat chicken, beans, corn, and spices on stovetop.
[*]Spray two large baking sheets with cooking spray. Place 2 tortillas on each sheet. Top each tortilla with bean mixture and half the cheese. Top with another tortilla.
[*]Bake until tortillas are crisp and cheese is melted, about 5-7 minutes. Cut into wedges with pizza cutter or steak knife and serve.

- 1/2 tsp ground cumin
