Serves 2
[*]Heat oven to 500 degrees F. Lighly coat 4 flour tortillas with nonstick spray. Bake on a baking sheet until toasted.
[*]Mix canned refried beans & chopped, fully cooked chorizo sausage. Spread on each tortilla; sprinkle with shredded Mexican cheese blend. Makes 2 stacks.
[*]Bake 2 minutes to melt cheese. Top with sour cream, & if you have it in the house, shredded lettuce, diced tomato & avocado.
* Fajita-size flour tortillas are perfect for this.
